To this day, Total War II: Shogun 2 is considered by many as the definitive historical Total War title. They start at the northern tip of Japan and therefore only have to worry about pushing in one direction throughout the campaign and only have to worry about land invasion from one side. Chesokobe is also a good choice. Being down south, they will also get early access to convert to christianity which gives you a huge advantage in access to gunpowder units.A good second step from each of these that step up difficulty a bit but keep in line with the same general tactics, is Date->Uesugi for very offensive play, Chosokabe->Hojo for defensive tactics (Hojo is actually not a huge step in difficulty, and might be a good start if you like defensive play focusing on fortifications more than defensive play in the field with archers), and Shimazu->Oda for balanced armies (although Oda is a significant jump in difficulty in early game).EDIT: Figured I would add one thing to that I ran into early on in playing Shogun 2.
